History
The Bauru was invented in 1934 at the Ponto Chic restaurant in São Paulo, when a law student named Casimiro Pinto Neto — nicknamed 'Bauru' after his hometown — asked the kitchen to create something special. The cook hollowed out a French roll, filled it with roast beef, melted cheese, tomato and pickled cucumber, and a Brazilian classic was born. Today it is so iconic that its recipe is legally defined by the city of São Paulo.

- French roll (hollowed out)
- Roast beef, thinly sliced
- Mozzarella cheese
- Tomato, sliced
- Pickled cucumber
- Salt to taste
How to Make
- 1Hollow out a fresh French roll, removing most of the inner crumb.
- 2Layer thinly sliced roast beef inside the roll.
- 3Add sliced tomato and pickled cucumber.
- 4Top generously with mozzarella cheese.
- 5Place under a broiler or in a sandwich press until the cheese is fully melted and gooey.
- 6Season with salt, close and serve immediately.
