A Mumbai street-food institution, the Bombay sandwich layers thin slices of buttered white bread with spiced mashed potato, cucumber, tomato, onion and boiled beetroot, all bound by a bright green coriander-mint chutney and dusted with tangy chaat masala. Sold from carts across the city, it's often pressed in a hinged griddle into a crisp 'grilled' version.

- White sandwich bread
- Butter
- Green coriander-mint chutney
- Spiced mashed potato
- Cucumber
- Tomato
- Onion
- Boiled beetroot
- Green chilies
- Chaat masala
How to Make
- 1Butter slices of white bread and spread generously with green coriander-mint chutney.
- 2Layer on spiced mashed potato and slices of cucumber, tomato, onion and boiled beetroot.
- 3Sprinkle with chaat masala and chopped green chilies.
- 4Close the sandwich, butter the outside and griddle in a press until crisp and golden.
- 5Cut into triangles and serve with extra chutney and ketchup.
