History
The cemita is the signature torta of Puebla, Mexico, built on a domed, sesame-seeded brioche-like roll of the same name. Stacked with crisp milanesa, stringy Oaxaca cheese, avocado and smoky chipotle in adobo, it's richer and more aromatic than a standard torta thanks to a sprig of pápalo.

- Sesame cemita roll
- Breaded beef or chicken milanesa
- Oaxaca cheese
- Avocado
- Chipotles in adobo
- Pápalo or cilantro
- Sliced onion
How to Make
- 1Bread and fry a thin beef or chicken cutlet until crisp.
- 2Split the sesame cemita roll and pull out a little crumb.
- 3Layer avocado, the milanesa and shredded Oaxaca cheese.
- 4Add sliced onion, chipotles in adobo and pápalo leaves.
- 5Close, press lightly and serve.
