History

The cemita is the signature torta of Puebla, Mexico, built on a domed, sesame-seeded brioche-like roll of the same name. Stacked with crisp milanesa, stringy Oaxaca cheese, avocado and smoky chipotle in adobo, it's richer and more aromatic than a standard torta thanks to a sprig of pápalo.

Ingredients

  • Sesame cemita roll
  • Breaded beef or chicken milanesa
  • Oaxaca cheese
  • Avocado
  • Chipotles in adobo
  • Pápalo or cilantro
  • Sliced onion

How to Make

  1. 1Bread and fry a thin beef or chicken cutlet until crisp.
  2. 2Split the sesame cemita roll and pull out a little crumb.
  3. 3Layer avocado, the milanesa and shredded Oaxaca cheese.
  4. 4Add sliced onion, chipotles in adobo and pápalo leaves.
  5. 5Close, press lightly and serve.
