History
Choripán — chorizo plus pan — is the street and asado classic of Argentina and Uruguay. The sausage is grilled, butterflied 'a la mariposa,' and dressed with bright, garlicky chimichurri, the ultimate prelude to a barbecue.
Ingredients
- Crusty baguette or marraqueta roll
- Grilled chorizo sausage
- Chimichurri
- Grilled red pepper (optional)
How to Make
- 1Grill chorizo over medium coals, then butterfly it lengthwise and crisp the cut side.
- 2Warm a crusty roll on the grill.
- 3Nestle the chorizo into the roll.
- 4Spoon over plenty of chimichurri.
- 5Add grilled pepper strips if desired and serve hot.
