Cong you bing — scallion pancakes — have been a staple of Chinese cooking for centuries, eaten across mainland China and Taiwan as a breakfast and street-food classic. In Taiwan, the sandwich form — a freshly griddled flaky scallion pancake wrapped around braised beef, a fried egg and sauces — became a beloved night-market and breakfast-stall staple in the late 20th century. The contrast of the crispy, layered pancake with tender braised meat and runny egg made it one of the most satisfying and distinctive sandwiches in Taiwanese street food.
Ingredients
- Scallion pancake (flour, water, sesame oil, green onions)
- Braised beef (or shredded chicken)
- Fried egg
- Hoisin sauce
- Chili sauce
- Pickled daikon
- Cilantro
How to Make
- 1Mix flour and hot water to form a dough; rest for 30 minutes.
- 2Roll out thinly, brush with sesame oil and scatter with chopped green onions; roll up and coil into a round, then flatten and griddle until golden and crispy.
- 3Braise beef with soy sauce, star anise and ginger until tender; shred.
- 4Fry an egg to your liking.
- 5Spread hoisin and chili sauce on the pancake.
- 6Layer with braised beef, fried egg, pickled daikon and cilantro.
- 7Roll or fold and serve immediately.
