The deviled egg sandwich is a natural evolution of the Southern party staple, the deviled egg. Across the American South, church potlucks and Sunday gatherings gave rise to the tradition of mashing the same spiced yolk mixture — mustard, mayo, paprika, pickle relish — between slices of soft white bread. Simple, rich and deeply nostalgic, it became a beloved lunchbox and diner item throughout the 20th century.
Ingredients
- Soft white sandwich bread
- Hard-boiled eggs
- Mayonnaise
- Yellow mustard
- Sweet pickle relish
- Paprika
- Salt and black pepper
- Butter lettuce (optional)
How to Make
- 1Hard-boil eggs, peel and halve them.
- 2Remove yolks and mash with mayonnaise, mustard, relish, salt, pepper and a pinch of paprika.
- 3Chop the egg whites and fold into the yolk mixture.
- 4Spread generously on one slice of soft white bread.
- 5Top with butter lettuce if desired and close the sandwich.
- 6Serve immediately or chill and serve cold.
