History
The eggplant parm sub is the Italian-American deli's great vegetarian hero: rounds of breaded, fried eggplant layered with marinara and mozzarella, baked until bubbling and stuffed into a crusty roll. It descends from melanzane alla parmigiana, the southern Italian baked-eggplant dish, reimagined as a hearty sandwich in the red-sauce joints of the American Northeast.

How to Make
- 1Slice eggplant, bread it and fry until golden and tender.
- 2Layer the eggplant with marinara and mozzarella and bake until the cheese melts and bubbles.
- 3Split a crusty Italian hero roll and warm it.
- 4Pile in the eggplant parmesan and spoon over extra marinara.
- 5Finish with grated Parmesan and fresh basil, close and serve hot.
