History

The eggplant parm sub is the Italian-American deli's great vegetarian hero: rounds of breaded, fried eggplant layered with marinara and mozzarella, baked until bubbling and stuffed into a crusty roll. It descends from melanzane alla parmigiana, the southern Italian baked-eggplant dish, reimagined as a hearty sandwich in the red-sauce joints of the American Northeast.

  • Breaded fried eggplant
  • Marinara sauce
  • Mozzarella
  • Parmesan
  • Fresh basil

How to Make

  1. 1Slice eggplant, bread it and fry until golden and tender.
  2. 2Layer the eggplant with marinara and mozzarella and bake until the cheese melts and bubbles.
  3. 3Split a crusty Italian hero roll and warm it.
  4. 4Pile in the eggplant parmesan and spoon over extra marinara.
  5. 5Finish with grated Parmesan and fresh basil, close and serve hot.
