History

The elote sandwich is a natural evolution of elote callejero — Mexican street corn slathered in mayo, cotija, chili powder and lime — into handheld sandwich form. As Mexican street food exploded in popularity across the United States in the 2010s, food trucks and creative chefs began tucking all the flavors of elote into bread rolls, creating a sandwich that captures the bold, tangy, creamy and smoky character of the beloved street snack. It is both a tribute to Mexican street-food culture and a distinctly modern creation.
