Gatsby
Cape Town, South Africa
History
The Gatsby was born in 1976 in Cape Town's Athlone neighbourhood, when Rashaad Pandy ordered a large roll stuffed with chips, polony and atchar from a fish and chips shop to feed his hungry workers. One worker exclaimed it was 'a Gatsby smash!' — a reference to the newly released Great Gatsby film — and the name stuck. Today it is a Cape Town institution, sold in huge shared rolls that feed four or more, piled with everything from masala steak to calamari.
Ingredients
- Long Vienna or hoagie-style roll (extra large)
- Masala steak strips, polony or calamari
- French fries (chips), cooked
- Atchar (spiced mango pickle)
- Lettuce
- Tomato
- Red onion
- Cheddar or processed cheese slices
- Tomato sauce and hot sauce
How to Make
- 1Cook masala steak: marinate thin beef strips in Cape Malay masala spice, garlic, ginger, lemon juice and oil. Pan-fry on high heat until charred and cooked through.
- 2Fry chips (French fries) until golden and crispy. Season with salt.
- 3Slice the long roll lengthwise without cutting all the way through.
- 4Spread atchar generously on both cut sides.
- 5Layer lettuce, sliced tomato and red onion on the base.
- 6Pile on the masala steak or polony.
- 7Add the hot chips directly on top of the meat.
- 8Top with cheese slices, tomato sauce and hot sauce.
- 9Press the roll closed, slice into 4 portions, and share.
