History

Descended from the Ottoman döner kebab, the Greek gyro (meaning 'turn') shaves meat off a vertical rotisserie into warm pita with tomato, onion and cool tzatziki. It spread across the U.S. through Greek immigrants in the 1960s and '70s.

Ingredients

  • Warm pita bread
  • Gyro meat (lamb & beef, or chicken)
  • Tzatziki sauce
  • Tomato
  • Red onion
  • Lettuce

How to Make

  1. 1Warm the pita.
  2. 2Spread with tzatziki.
  3. 3Add sliced gyro meat, tomato, onion and lettuce.
  4. 4Wrap tightly and serve.
