History

Created in 1926 at Louisville's Brown Hotel to feed late-night dancers something better than ham and eggs, the Hot Brown smothers sliced turkey on toast in creamy Mornay, tops it with tomato and bacon, and broils it until bubbling.

Ingredients

  • Texas toast (thick white bread)
  • Roast turkey, sliced
  • Mornay (cheese) sauce
  • Bacon
  • Tomato
  • Parmesan
  • Paprika

How to Make

  1. 1Lay toast in an oven-proof dish and pile on roast turkey.
  2. 2Smother with warm Mornay sauce made from butter, flour, cream and Parmesan.
  3. 3Top with tomato slices.
  4. 4Broil until the sauce is bubbling and golden.
  5. 5Crisscross with crisp bacon, dust with paprika and serve hot.
