A New England summer icon born on the coasts of Connecticut and Maine in the early 20th century. Maine-style dresses cold lobster in a little mayo; Connecticut-style serves it warm in melted butter. Either way, the bun is split-top and griddled.

Ingredients

  • Split-top hot dog bun
  • Fresh lobster meat
  • Butter
  • Mayonnaise
  • Lemon
  • Celery
  • Chives

How to Make

  1. 1Toast the buttered split-top bun until golden.
  2. 2Toss lobster meat with a little mayo (or warm butter), lemon, celery and chives.
  3. 3Pile generously into the bun and serve.
