A New England summer icon born on the coasts of Connecticut and Maine in the early 20th century. Maine-style dresses cold lobster in a little mayo; Connecticut-style serves it warm in melted butter. Either way, the bun is split-top and griddled.

- Split-top hot dog bun
- Fresh lobster meat
- Butter
- Mayonnaise
- Lemon
- Celery
- Chives
How to Make
- 1Toast the buttered split-top bun until golden.
- 2Toss lobster meat with a little mayo (or warm butter), lemon, celery and chives.
- 3Pile generously into the bun and serve.
