History
Merguez — a spicy lamb and beef sausage seasoned with harissa, cumin and paprika — arrived in France with North African immigrants in the mid-20th century and quickly became one of the country's most beloved street foods. Grilled at marchés, festivals and street stalls across France, merguez in a baguette with mustard or harissa is the definitive French street sandwich of North African heritage, as French as it is Maghrebi.

How to Make
- 1Grill merguez sausages over high heat until charred and cooked through, about 8–10 minutes.
- 2Split a fresh baguette lengthwise without cutting all the way through.
- 3Spread one side with Dijon mustard and the other with harissa.
- 4Add sliced tomato and lettuce to the base.
- 5Lay the hot merguez sausages inside.
- 6Top with fried onions and serve immediately.
