History

Rou Jia Mo is considered one of the world's oldest sandwiches, with roots stretching back over 2,000 years to the Qin and Zhou dynasties of ancient China. The 'mo' — a round, unleavened flatbread — was a staple of the Shaanxi region, and the practice of stuffing it with slow-braised pork seasoned with over 20 spices became the defining street food of Xi'an. Today it is sold from street stalls and small restaurants across China and has gained international recognition as one of the great street sandwiches of the world.

Ingredients

  • Baked mo flatbread (flour, water, yeast)
  • Slow-braised pork belly
  • Star anise
  • Cinnamon
  • Dried chili
  • Soy sauce
  • Rice wine
  • Ginger
  • Garlic
  • Green onions
  • Cilantro

How to Make

  1. 1Braise pork belly with soy sauce, rice wine, star anise, cinnamon, dried chili, ginger and garlic for 2–3 hours until tender.
  2. 2Mix flour, water and a little yeast to form a dough; rest for 30 minutes.
  3. 3Shape dough into small round flatbreads and cook in a dry skillet or oven until puffed and golden.
  4. 4Finely chop or shred the braised pork.
  5. 5Split the mo open and stuff generously with pork, green onions and cilantro.
  6. 6Serve immediately.
