Brought to Israel by Iraqi-Jewish immigrants, sabich echoes the Shabbat-morning breakfast of fried eggplant and hard-boiled egg. Stuffed into pita with hummus, chopped salad, tahini and tangy amba (pickled-mango sauce), it became a Tel Aviv street-food staple.

How to Make
- 1Fry eggplant slices until soft and golden.
