History

The sandwich parisien is the most ordered sandwich in French cafés and brasseries — a direct cousin of the jambon-beurre but with the addition of Emmental cheese. Sold from zinc bar counters and café terraces across Paris since the early 20th century, it represents the Parisian ideal of quality over complexity: excellent baguette, good butter, jambon de Paris and a few slices of cheese. It is the default lunch of Parisians who want something fast, familiar and quietly perfect.

Ingredients

  • Fresh Parisian baguette
  • Jambon de Paris (cooked ham), sliced
  • Emmental cheese, sliced
  • French unsalted butter, softened
  • Dijon mustard (optional)
  • Cornichons on the side

How to Make

  1. 1Split a fresh baguette lengthwise, leaving a hinge.
  2. 2Spread both cut sides generously with softened butter.
  3. 3Add a thin layer of Dijon mustard on one side if desired.
  4. 4Layer with slices of jambon de Paris.
  5. 5Add slices of Emmental cheese.
  6. 6Close the baguette, press gently and serve with cornichons on the side.
