History

The Reuben's origins are hotly contested. One story credits Reuben Kulakofsky, a Lithuanian-born Omaha grocer who built it for his weekly 1920s poker game; another credits Arnold Reuben's New York deli. Either way, corned beef, Swiss, sauerkraut and Russian dressing griddled on rye became an American deli icon.

Ingredients

  • Rye bread
  • Corned beef
  • Swiss cheese
  • Sauerkraut
  • Russian (or Thousand Island) dressing
  • Butter

How to Make

  1. 1Butter the outside of each slice of rye.
  2. 2Spread Russian dressing on the inside faces.
  3. 3Layer corned beef, sauerkraut and Swiss between the slices.
  4. 4Grill in a hot buttered pan until golden and the cheese melts, ~3-4 min per side.
  5. 5Slice on the diagonal and serve hot.
