History
The torta cubana is the maximalist king of Mexican street sandwiches, its name a loose nod to Cuba though it is thoroughly Mexican in spirit and execution. Born in Mexico City's fondas and street stalls, it piles a single telera roll with a staggering array of ingredients — milanesa, ham, chorizo, hot dog, egg, cheese, avocado, jalapeños and more. It is the sandwich for when you cannot choose, and choosing everything is the only answer.
Ingredients
- Telera roll (or bolillo)
- Milanesa (breaded beef cutlet)
- Sliced ham
- Chorizo, cooked
- Hot dog, sliced
- Fried egg
- Oaxaca or Manchego cheese
- Refried black beans
- Avocado slices
- Pickled jalapeños
- Tomato slices
- Lettuce
- Mexican crema
- Salsa roja
How to Make
- 1Fry or bake the milanesa until golden and crisp. Set aside.
- 2Cook chorizo and sliced hot dog in a pan until browned.
- 3Fry the egg in the same pan.
- 4Split and lightly toast the telera on a griddle.
- 5Spread one half with refried beans and the other with crema.
- 6Layer everything: milanesa, ham, chorizo, hot dog, egg, cheese, avocado, jalapeños, tomato and lettuce.
- 7Drizzle with salsa roja. Close, press firmly and serve.
