Vada Pav

History
Often called the Indian burger, vada pav was created in 1960s Mumbai as cheap, filling street food for mill and commuter crowds. A batata vada — spiced mashed-potato fritter in gram-flour batter — is tucked into a buttered pav with garlic and tamarind chutneys and a fried chili.
Ingredients
- Pav (soft Indian bun)
- Batata vada (spiced potato fritter)
- Dry garlic chutney
- Green chutney
- Tamarind chutney
- Fried green chili
How to Make
- 1Mash boiled potatoes with mustard seeds, turmeric, ginger, garlic and curry leaves; shape into balls.
- 2Coat in gram-flour batter and deep-fry until golden.
- 3Slit a pav and toast it in butter.
- 4Smear with garlic, green and tamarind chutneys.
- 5Press in the vada, add a fried chili and serve hot.
