Schwabl's

History

Schwabl's traces to 1837 — one of the oldest restaurants in the Buffalo area — and has been at its West Seneca home since 1942. Beef on weck, the quintessential Buffalo sandwich, is its calling card: a kummelweck roll topped with coarse salt and caraway, filled with thin-sliced rare roast beef carved to order, the top dipped in the roast's natural jus. Generations of the same family have kept the carving station and the recipe intact.
