What it is
The artisanal Modena IGP balsamic from Massimo Bottura of three-Michelin-star Osteria Francescana, aged through a succession of oak, chestnut, and juniper barrels. Glossy, syrupy, and balanced between sweet and tart.
How to best use it
Save it for finishing: a small syrupy splash over a mozzarella-and-tomato sandwich or a grilled-vegetable panini adds depth that a thinner vinegar can't, so use it sparingly.
