History
The po' boy was created during a 1929 New Orleans streetcar strike by the Martin brothers, former conductors who fed striking workers free sandwiches on Leidenheimer French bread — calling each a poor boy. Today the fried shrimp or oyster po' boy, dressed with lettuce, tomato and mayo, defines New Orleans lunch.
Ingredients
- New Orleans French bread (light, crisp)
- Fried shrimp (or roast beef)
- Shredded lettuce
- Sliced tomato
- Pickles
- Mayonnaise
- Hot sauce
How to Make
- 1Bread and fry the shrimp until golden (or use roast beef with gravy).
- 2Split the French bread and spread mayo.
- 3"Dress" it: lettuce, tomato and pickles.
- 4Pile on the shrimp; add hot sauce.
- 5Close and serve immediately.
