Skylight Inn BBQ

History

The Skylight Inn was opened in 1947 by Pete Jones, whose family traces its barbecue back generations in Pitt County. Eastern North Carolina style means the whole hog, cooked low over oak and hickory coals, then hand-chopped with crispy skin worked back in and seasoned simply with vinegar, salt, and pepper. After a 1979 National Geographic piece dubbed the area a 'bar-b-q capital,' the Joneses built the Capitol dome onto the roof — and later generations still cook the same way.
