What it is
Pommery's Vinaigre de Xeres, sherry vinegar from Spain aged in oak and bottled in France in a wax-sealed stoneware crock. Medium-bodied and gently sweet at 7% acidity.
How to best use it
Use it to brighten rather than soak: a few drops over a roasted-vegetable or chicken sandwich lifts the whole thing, or whisk it into a quick vinaigrette to dress the greens you pile on top.
